Brown Butter Maple Syrup

A simple maple syrup sauce made by browning butter and whisking in water, maple syrup, brown sugar, vanilla, salt, and optional xanthan gum.

Brown the butter and set aside.

In a saucepan, combine the water, maple syrup, and brown sugar. Heat until the sugar dissolves.

Whisk in the browned butter, vanilla, and salt.

Add the xanthan gum and blend with an immersion blender (or regular blender) for 30–60 seconds.

Let cool completely before refrigerating.
Notes
A few tips: • The xanthan gum is optional, but it helps keep the butter emulsified so the syrup stays smooth instead of separating in the fridge. • Blending is important, it breaks the butter into tiny droplets and evenly distributes the xanthan gum so it can do its job. • If you skip the xanthan gum, the syrup will still be delicious. Just give it a quick shake before using if it separates.
